Kiss the Cook: Sugar-coated pecans get spiced up

I have tried several times to make sugar coated nuts from scratch in a nut roaster. The results were mixed, but recently I decided to try another recipe and use the oven. Pecans happened to be on sale, so the timing was perfect to try the recipe below and make some delicious holiday pecans.
One of the benefits of roasting these pecans is the smell that fills your home. The smell of cinnamon and vanilla is just fantastic. Cinnamon Vanilla Sugar coated Pecans
Prep Time: 10 min
Cook time: 1 hrs.

Ingredients:
1 lb. pecans halves
2 egg whites
1 tbs. vanilla extract
1 cup white sugar
¾ tsp. salt
1 tsp. ground cinnamon

Directions:

1. Preheat your oven to 250 degrees F. Line a baking sheet with parchment paper or grease the sheet with non-stick cooking spray.
2. In a small bowl, whisk together the egg whites and vanilla until frothy. Mix the sugar, salt and cinnamon in a gallon ziplock bag.
3. Add the pecans to another ziplock bag, pour in the egg white mix, seal the bag and shake well until all the pecans are coated. Add these pecans to the ziplock bag with the sugar mix, seal the bag and shake well until well coated. Pour them out onto the baking sheet and spread evenly.
4. Bake at 250 degrees F for 1 hr. Stirring them every 15 minutes.
5. Allow to cool and then enjoy!
