Grilled shrimp that will make you say, ‘Wow!’

Seafood is one of my favorite foods. Cook it on the grill and it’s even better. Recently, I was a little hungry for some shrimp. The local grocery store had fresh, large gulf shrimp on sale, so the timing was perfect to test another recipe.

The recipe below is a winner! The first shrimp I tried right off the grill made me go, “Wow, that’s awesome!”

There were a number of friends and family that were happy taste testers and every single ne of them loved this shrimp. I like a charred flavor to it, so I had my grill rather hot, 400 degrees. The shrimp sizzled when they hit the hot grill and I cooked them long enough to get a little char to them. The flavor combination was simply fantastic.

Grilled Shrimp that will make you say “Wow!”

Prep Time: 10-15 minutes

Ready in: about 1 hr 15 minutes

Ingredients:

1 lb. large fresh shrimp, peeled and deveined

1 ½ tsp. minced garlic or 2 garlic cloves, minced

1/3 c. extra virgin olive oil

¼ c. tomato sauce

2 tbs. red wine vinegar

2 tbs. fresh basil, chopped

½ tsp. salt

¼ tsp. cayenne pepper

4-5 skewers

Directions:

1. If using bamboo skewers, soak them in water while you prepare the marinade and shrimp. The longer they soak, the better.

2. In a large bowl, combine the garlic, olive oil, vinegar, tomato sauce, basil, salt and cayenne pepper, mix well. Add the shrimp and stir until well coated. Place in the refrigerator for 45 minutes to 1 hr., covered.

3. Preheat your grill to medium high heat. While the grill is heating up, place the shrimp on the skewers by inserting through the tail and head area. Throw away the remaining marinade.

4. Cook shrimp on the heated grill for approximately 3-4 minutes per side or until opaque. Serve right off the grill and enjoy!
