Kiss the Cook: Sumptuous summer slaw

Summer time means picnics and picnics mean great foods. Many times, I have found some really great dishes made for summer picnics. On a hot day, it’s nice to have a cold side dish that keeps well.

During the summer months, fresh vegetables are more readily available so anytime you can find a recipe that allows you to use up fresh garden vegetables and makes a great picnic dish, it’s a keeper.

Below is a very simple, easy to make dish that you can take to your next picnic. It’s cool, crisp and refreshing. On top of that, it’s very healthy. Enjoy!

Refreshing summer slaw salad

Prep Time: 25 minutes

Ready in: 2 hrs. 30 min

 

Ingredients:

2 cups green cabbage, shredded or sliced very thin

2 cups red cabbage, shredded or sliced very thin

1 cucumber, peeled, seeded and chopped

1 c. shredded carrots

1 green bell pepper, chopped

1 large tomato chopped or about 15-20 grape tomatoes cut into quarters

1 bunch scallions (green onions), chopped

½ c. sugar

½ c. vegetable oil

¼ c. white vinegar

Salt and black pepper to taste

 

Directions:

 

1). Combine the cabbage, carrots, bell pepper, tomato, and scallions in a large bowl.

2). In a sauce pan, stir the vegetable oil, vinegar, sugar, salt and pepper together and cook for about 5 minutes using medium heat until the sugar dissolves. Remove from heat and cool.

3). After cooling, pour over the salad, stir well to coat and refrigerate for 2 hours.

4). Serve cold and enjoy!
